Interesting idea…but how feasible will this be for mass wine production I don’t know.
My first question was where did the extra alcohol go, which was further explained by making a dessert wine.
It will be interesting to see the full article.
I think in the end it transfers down to…Will I be able to increase sales or charge more for this wine if I process it in this way? If yes, I think it might be feasible about taking on the extra-processing techniques. White wine is always worrisome because you fear for oxidation and protecting it…I guess in the precence of alcohol it wouldn’t be too scary but that always frightens me.
